Where should we build the next Flying Banzini?

Chef Mathew Gregoire and I had a fun, pie in the sky conversation yesterday… if we were going to open a second Flying Banzini, where should we open it?

We are really interested in your opinion. You, our customers, are our best market research.

So… if you were going to expand, where would you go? Orleans? Barrhaven? Kanata? Byward Market? Saskatoon?

We day dream about different options too. Some more affordable than others. For instance, a small take-out only location with a limited menu. Or, a food truck. Or, another full location, similar to our existing spot.

When I created The Flying Banzini I felt it required a very busy, urban location. It was designed to be fast. Order at the counter and then sit to eat or take out. For a lot of reasons we have moved away from this initial model. We are still fast. Mat and I like meals coming out in 10 minutes. 15 if we are really swamped. But, what this means is that we have morphed into a fairly traditional restaurant. Thus, I no longer think we need a manic urban location. Our customers have taught us that they want The Flying Banzini to be a fast, convenient restaurant that features sit down service.

We would love your advice. If you were opening a second location, where would you go? What would you change?

I should note that this is a pie-in-the-sky conversation as nothing is going to happen anytime soon. But… you gotta dream.

    Barrhaven would be most convenient for my annual visit :). On the other hand it would likely make a great addition to Saskatoon’s food truck scene.

    My vote is for Orleans. Now, I’m a little biased as I live there, but honestly I find Orleans is lacking in great restaurants that are not from big chains.

    Barrhaven! I love the atmosphere of your restaurant and we could use more of that here (too many fast food chains and only a small handful of quality sit-down restaurants).

    As I now live in Barrhaven I kind of like this idea. I feel a greater sense of community here than I did in Kanata. Is that just me?
