Last menu changes until spring but daily specials are coming soon.

We have made another small revision to our menu. This is what it shall be until spring although we are shortly to install a chalkboard at the entrance to list various information – today’s soup and specials. I am keen to keep the main menu consistent in order to continue to establish what we do and to keep from the hassle of changing things. Any menu revision results in changes to the wall menu boards, the printable menu, the online menu, and online ordering.

This is why we need to install a chalkboard. It will let us make daily changes of a temporary nature.

I am thinking that the board will list four things: (1) soup, (2) panini special, (3) pizza special, and (4) vegetarian special. I am particular about adding a vegetarian special as we eliminated to vegetarian items from the menu before Christmas and I want to ensure that there is adequate vegetarian options.

Changes to the permanent menu:

Dropped piccalilli sauce – nobody was choosing it and it’s labour intensive.

Changed “roast beef” to “pulled beef” – No change to the new recipe but I feel it’s a better description of what you are getting when you order this sandwich. Our earlier switch to preparing the meat in this way has given is consistency which is good but when someone sees “roast beef” they are thinking it will be a carved beef which it no longer is.

Dropped Dance Dance Dance and Swing Swing Swing – These are the two recipes that include salmon. I labored over this decision for a long time. We sell very few salmon paninis and even fewer salmon pizzas.

Long story made short, I am simply trying to make our menu a little bit more efficient. We do everything in house (except focaccia). We have a labour intense menu. This is one of the reasons that in these lean months of December, January, and February we are continuing to lose money. Our labour costs are too high. Unfortunately, we have to find ways to do a little bit less. This breaks my heart because I am proud of what we do. But, my thinking has always been, “Do a small number of things but do them very, very well.” Maybe we are doing too much.

Since I don’t eat meat (non fish meat) and since you’re punting the salmon choices, I’m glad you’re going to offer a veggie daily special. Thanks!
