Our first Tastes of Wellington and another big problem

Sweet Banzini Raelene, the creator of all our mini cheesecakes, gave away 1000 of her finest to passersby yesterday. And, $207 was donated to the Parkdale Food Centre (the closest food bank to us). Thanks Raelene (and Leena, assistant pastry chef) for all your hard work making all those masterpieces.

I am proud of The Flying Banzini. I am particularly proud to have Raelene as my business partner. Her cheesecakes – look, appearance, taste, affordability, etc – are a HUGE part of The Flying Banzini experience.

His worship Mayor Jim Watson, Councillor Katherine Hobbs, and MPP Yasir Naqvi were all by in the afternoon to unveil the beginning of my historic display (also in the photo, Raye Ann’s son Jackson and Raelene’s daughter Maddy). The Collected Works book (once the sign on the front of the building) is now on the wall near the door. Coming soon, the March 15, 1938 front page and full page about the building. We were opened as Nichols Drug Store in 1938. If anyone has any historic photos of the building or the street I would be very interested. And, in particular, if anyone knows any of Mr Nichols descendants I would love to meet them.

The day was great.

We are having trouble keeping everything on hand. This comes back to my lack of experience in the restaurant business and no real idea what our customer volume is. Our goal this week is to get a good system in place for inventory. Chef Ryan (lots of experience) has a good handle on the kitchen and food requirements, it’s all the front of house that I have been taking care of where the biggest problems are.

In the first two weeks we have, from time to time, run out of the following: beer, wine, Coke, fizzy water, beets, porchetta, beef, prosciutto, placemats, tea, coffee, and garbage bags.

Everyday, though, we get a little better. Yesterday was our busiest day to date and we had very, very few problems.

Dave, My Spice and 4th child unit stopped in for a bite between bouncing in the castle.

Papa ordered the Flame of Love, and shared it with the six year old who declared it was ‘yummy’. So Dave, I think your ‘child menu’ is a-ok. Especially with us!

I’ll be in soon with some new customers for a cheese cake date!
