The next menu change
Chef Nico has the Porchetta consistent and delicious. He is also responsible for our roast chicken sandwich which is the menu item that we are most likely to run out of. It used to be beets. We used to run out of beets. In our first three weeks we seemed to run out of beets every day or two. We kept ordering more and more beets and now we seem to have enough beets. We go through about 100 lbs per week. Now, it’s Nico’s Roast Chicken Sandwich. It seem to come in waves. We are minding our own business and then, whammo, everybody wants a chicken sandwich and all of a sudden we are out of chicken.
Next up… Beef Outside Round is changing to Roast Beef. In part I realize it’s odd to title the sandwich after the cut of beef that we are using but I think we will be moving to a different cut of beef. My instinct (and the chef’s) is that we need a higher fat content to make it is juicy and delicious as it should be.
So, beef fans, stand by. Our porchetta and our chicken are, indeed, lofty roast meats. Our beef is not, but that is our current top priority.
