Grow take out and survive the zombie apocalypse
Take out has always been a significant part of the business plan at The Flying Banzini but we have done nothing, so far, to promote our take out business. I have been waiting for a few things. First, speed of service. I need the kitchen to be able to keep up with demand before adding any extra load. I think we are there now. Second, consistency of our food. I think we are also there with the only exception being crackling. We still haven’t got the crackling for the porchetta right but I know that Chef Nico is working on that and I am confident that he will have it solved soon. Thus, it’s time…
And… I have no idea how to do that. So this is my current puzzle.
The best items for takeout are our Soft Bun Sandwiches – Porchetta, Beef, and Chicken. If you order these items they are ready almost instantly because it’s simply a matter of carving the meat, adding the sauce, and putting it on the bun. Voila, ready almost instantly. So, I will begin promoting this.
Second, online ordering. I have entered a contract to set this up. Basically, you will be able to order online, pay, and pick your meal up at a specific time. The system is such that we can decide how much a load that we can tolerate. In other words, we can limit the number of orders that will be ready at noon. Once the noon time slot is full, you will have to pick 11:50 or 12:10. That sort of thing and this is simply to spread the load on the kitchen.
So… pass the word. The Flying Banzini does takeout. The entire menu is available.

P.S. if the Zombie Apocalypse does hit today I could not reccomend The Flying Banzini as a good defensible position. Too many egress points. My father and I do have our warm hats ready, though.
